Preparation Steps
  1. In a medium mixing bowl, blend 1 cup of mascarpone cheese with ½ cup of powdered sugar using a hand mixer on low speed until smooth.
  2. Whip 1 cup of heavy cream in a separate bowl until stiff peaks form, then gently fold into the mascarpone mixture.
  3. Fold ½ cup of finely chopped pistachios into the mousse mixture until evenly distributed.
  4. Transfer mousse to serving glasses and refrigerate for at least 2 hours to set.
  5. Heat ½ cup of heavy cream until it simmers, pour over 4 ounces of chopped dark chocolate, and stir until smooth to create ganache.
  6. Spoon chocolate ganache over the set mousse, and garnish with chopped pistachios before serving.
