  • 1.5 cups shredded mozzarella
  • 1 cup almond meal or flour substitute with coconut flour if needed
  • 1 large egg for crust
  • 1 teaspoon garlic powder can be replaced with fresh minced garlic
For the Filling
  • 1 bunch green asparagus trimmed and chopped
  • 4 large eggs
  • 0.5 cups yogurt substitute with sour cream or heavy cream for a richer taste
  • 200 grams camembert cheese or substitute with brie or goat cheese
  • 2 tablespoons parsley freshly chopped, optional for garnish

Method
 

Step-by-Step Instructions
  1. Melt shredded mozzarella cheese in a medium saucepan over low heat, stirring constantly until smooth. Remove from heat and mix in almond meal and garlic powder until combined. Add egg and knead into a dough for 2-3 minutes.
  2. Preheat oven to 190°C (370°F).
  3. In a mixing bowl, whisk together eggs and yogurt until smooth. Fold in chopped asparagus and parsley.
  4. Grease quiche dish and press fathead dough evenly to form the crust. Use a fork to pierce holes.
  5. Pour filling into the crust, adding extra asparagus tips and chunks of camembert cheese on top.
  6. Bake for 45 minutes, or until the filling is set and the top is golden.
  7. Let cool for 5-10 minutes before slicing and serving.
