- Melt shredded mozzarella cheese in a medium saucepan over low heat, stirring constantly until smooth. Remove from heat and mix in almond meal and garlic powder until combined. Add egg and knead into a dough for 2-3 minutes.
- Preheat oven to 190°C (370°F).
- In a mixing bowl, whisk together eggs and yogurt until smooth. Fold in chopped asparagus and parsley.
- Grease quiche dish and press fathead dough evenly to form the crust. Use a fork to pierce holes.
- Pour filling into the crust, adding extra asparagus tips and chunks of camembert cheese on top.
- Bake for 45 minutes, or until the filling is set and the top is golden.
- Let cool for 5-10 minutes before slicing and serving.
