  • 16 oz Cheese Tortellini fresh or refrigerated
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber diced
  • 1/2 cup Kalamata Olives
  • 1/4 cup Red Onion soaked in cold water
  • 1 cup Feta Cheese crumbled
For the Dressing
  • 1/4 cup Olive Oil extra-virgin
  • 1/4 cup Red Wine Vinegar
  • 1 clove Minced Garlic
  • 1 tsp Dried Oregano
  • to taste Salt
  • to taste Pepper

Method
 

Directions
  1. Cook the tortellini in a large pot of salted boiling water for 3-5 minutes until they float.
  2. Cool the tortellini by rinsing under cold water and spread on a towel to remove excess moisture.
  3. Prepare vegetables by chopping the tomatoes, cucumber, and olives; soak onions in cold water if desired.
  4. Combine cooled tortellini with chopped vegetables and crumbled feta in a mixing bowl.
  5. Whisk together olive oil, vinegar, garlic, oregano, salt, and pepper to make the dressing.
  6. Drizzle dressing over the salad and gently mix until coated.
  7. Chill in the refrigerator for at least 30 minutes before serving.
