Skewers
  • 1 lb Large Shrimp (peeled and deveined) Choose firm varieties for the best texture.
  • 1 lb Large Sea Scallops (side-muscle removed) Can swap for firm fish chunks.
  • 1 large Red Bell Pepper (cut into 1-inch pieces) Substitute with other bell peppers or zucchini.
  • 1 large Green Bell Pepper (cut into 1-inch pieces) Can be swapped with other colors of bell pepper.
  • 1 large Red Onion (cut into 1-inch wedges) Replace with yellow onion or shallots if desired.

Method
 

Preparation
  1. Soak your wooden skewers in water for at least 30 minutes.
  2. In a mixing bowl, whisk together the marinade ingredients.
  3. Combine the seafood and vegetables with three-quarters of the marinade and marinate for 15-20 minutes.
  4. Assemble the skewers by alternating shrimp, scallops, and vegetable pieces.
  5. Preheat your grill to medium-high heat (400-450°F) and oil the grates.
  6. Grill the skewers for about 3-4 minutes on each side, basting with the reserved marinade during the last minute.
  7. Remove from the grill, arrange on a platter, and serve.
