Step-by-Step Instructions for Halloween Monster Meatballs
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with aluminum foil.
  2. In a large skillet, heat the olive oil over medium heat. Sauté the red bell pepper and red onion for about 5 minutes.
  3. Stir in the garlic and Italian parsley, cooking until aromatic. Reserve half for the sauce later.
  4. In a mixing bowl, combine breadcrumbs and milk. After a minute, add the sautéed vegetables, ground beef, and olives, then season and mix gently.
  5. Form meatballs by scooping out about 2 tablespoons of the mixture, placing a sliced olive in each.
  6. Bake the meatballs in the oven for about 25 minutes until cooked through.
  7. For the sauce, return reserved vegetables to the skillet, adding jelly, orange juice, tomato paste, vinegar, and soy sauce. Heat until combined.
  8. Serve the meatballs warm with a drizzle of sauce over them.
