  • 1 pound Sausage substitute with ham, bacon, or vegetarian alternatives
  • 8 large Eggs can replace some whole eggs with egg whites
  • 1 cup Milk can use dairy-free alternatives like almond or oat milk
  • 2 cups Shredded Cheese
For the Vegetables
  • 1 tablespoon Olive Oil can substitute with any cooking oil
  • 2 cloves Garlic fresh minced or powdered
  • 2 cups Fresh Spinach can substitute with kale or omit
  • 1 cup Bell Peppers can substitute with zucchini or mushrooms
  • 1 large Yellow Onion can use shallots or red onions

Method
 

Preparation
  1. Preheat your oven to 375°F (191°C) and gather your ingredients.
  2. In a large skillet over medium heat, brown the sausage for 6–8 minutes until golden.
  3. In the same skillet, sauté garlic, bell peppers, onion, and spinach for 4–5 minutes.
  4. Combine the cooked sausage and sautéed vegetables in a greased casserole dish.
  5. Whisk together eggs, milk, and half the cheese in a medium bowl, then pour over the mixture.
  6. Add remaining cheese and season with salt and pepper.
  7. Bake in the preheated oven for about 45 minutes until golden brown.
  8. Allow the casserole to cool for at least 15 minutes before serving.
  9. You can cover and refrigerate the uncooked casserole for up to 24 hours if desired.
