Preparation
- Preheat your oven to 375°F (191°C) and gather your ingredients.
- In a large skillet over medium heat, brown the sausage for 6–8 minutes until golden.
- In the same skillet, sauté garlic, bell peppers, onion, and spinach for 4–5 minutes.
- Combine the cooked sausage and sautéed vegetables in a greased casserole dish.
- Whisk together eggs, milk, and half the cheese in a medium bowl, then pour over the mixture.
- Add remaining cheese and season with salt and pepper.
- Bake in the preheated oven for about 45 minutes until golden brown.
- Allow the casserole to cool for at least 15 minutes before serving.
- You can cover and refrigerate the uncooked casserole for up to 24 hours if desired.
