For the Stir-Fry
  • 1 pound Ground Beef can be substituted with ground turkey, chicken, or lamb
  • 2 tablespoons Olive Oil
  • 1 Onion finely chopped
  • 3 cloves Garlic minced
  • 1 Bell Pepper diced
  • 1 Zucchini diced
  • Salt to taste
  • Black Pepper to taste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • Red Pepper Flakes optional
  • 1 cup Cherry Tomatoes halved
  • ½ cup Kalamata Olives
  • ¼ cup Fresh Parsley chopped
  • 2 tablespoons Lemon Juice fresh-squeezed
  • Feta Cheese optional
  • Pine Nuts optional, toasted

Method
 

Steps to Prepare
  1. Start by heating 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 finely chopped onion to the heated skillet, stirring frequently for 2-3 minutes until it softens and turns translucent.
  3. Next, mix in 3 minced garlic cloves, cooking for an additional 30 seconds.
  4. Introduce 1 pound of ground beef into the skillet. Season with salt, black pepper, ground cumin, smoked paprika, and dried oregano. Cook for 5-7 minutes while breaking the meat apart.
  5. Incorporate 1 diced bell pepper and 1 diced zucchini into the skillet. Sauté for about 5 minutes, stirring occasionally until they soften.
  6. Add 1 cup of halved cherry tomatoes and ½ cup of Kalamata olives to the pan. Stir well and allow the mixture to cook for another 2 minutes.
  7. Remove from heat and stir in freshly chopped parsley and lemon juice. Optionally, top with crumbled feta cheese and toasted pine nuts before serving.
