For the Shrimp Marinade
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon dried oregano or fresh oregano
  • a pinch crushed red pepper adjust according to spice preference
  • 2 cloves garlic minced; fresh is best
  • 1 tablespoon lemon juice fresh lemons recommended
  • 1/2 lemon lemon zest optional
For the Bowl Base
  • 8 ounces large shrimp peeled and deveined
  • 2 cups cooked white rice substitute quinoa or brown rice if preferred
  • a handful fresh parsley chopped for garnish
For the Topping
  • 1 cup tomato cucumber salsa store-bought options are fine
  • 1/2 cup feta cheese optional, omit for dairy-free

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine olive oil, dried oregano, crushed red pepper, minced garlic, lemon juice, and lemon zest. Add shrimp and toss to coat. Let marinate for about 10 minutes.
  2. Heat a non-stick skillet over medium heat. Add the marinated shrimp and cook for 5-6 minutes, flipping halfway until pink and opaque.
  3. In another bowl, combine cooked white rice with remaining lemon juice and chopped parsley. Stir well.
  4. Divide parsley rice into two bowls. Top with cooked shrimp.
  5. Add tomato cucumber salsa on top of each bowl. Optionally, sprinkle feta cheese for added flavor.
