- Thoroughly wash, hull, and slice fresh strawberries. Optionally, sprinkle with sugar and let sit for 10-15 minutes to release juices.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth. In a separate bowl, whip heavy cream to soft peaks and fold into cream cheese mixture.
- Line a 9x13 inch dish with graham crackers. Spread one-third of the cream cheese mixture, then layer half of the sliced strawberries. Repeat, finishing with cream cheese mixture.
- Cover and refrigerate for at least 4 hours or preferably overnight to let flavors meld.
- Slice into squares and serve chilled, optionally garnished with fresh strawberries or powdered sugar.
