  • 1 head Romaine Lettuce feel free to substitute with arugula or spinach
  • 1 medium Shallots or use green onions/red onions
  • 1/2 cup Parmesan Cheese or use Pecorino Romano for a sharper bite
For the Dressing
  • 2 tablespoons Lemon Juice use fresh lemon for best taste
  • 1/4 cup Olive Oil or avocado oil/other neutral oils
  • 1 teaspoon Kosher Salt adjust with table salt if needed
  • 1/4 teaspoon Black Pepper or use white pepper for gentler flavor

Method
 

Preparation
  1. Wash the romaine lettuce thoroughly and chop into bite-sized pieces. Pat dry completely.
  2. Slice the shallots thinly and add them to a large salad bowl with the chopped romaine.
  3. Shave the parmesan cheese into thin slices and add to the salad bowl.
  4. In a jar or bowl, combine lemon juice, olive oil, kosher salt, and black pepper. Shake or whisk until emulsified.
  5. Pour the dressing over the salad mixture and toss gently but thoroughly until evenly coated.
  6. Serve immediately in individual bowls or a platter.
