Preparation Steps

  2. Peel the sweet potatoes and slice them into ½-inch rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, garlic powder, and smoked paprika until well coated.
  4. Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  5. Once done, transfer to a serving platter, drizzle with honey, and sprinkle crumbled feta cheese and fresh herbs on top.
