- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into ½-inch rounds.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, garlic powder, and smoked paprika until well coated.
- Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
- Once done, transfer to a serving platter, drizzle with honey, and sprinkle crumbled feta cheese and fresh herbs on top.
