- Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, about 8-10 minutes. Drain and lay flat.
- In a mixing bowl, combine shrimp, crab, ricotta cheese, half of the Alfredo sauce, and minced garlic. Season with salt and pepper to taste.
- Spread a thin layer of Alfredo sauce in the baking dish. Place a spoonful of filling on one end of a lasagna noodle and roll it tightly. Repeat with all noodles.
- Preheat the oven to 375°F (190°C). Pour remaining Alfredo sauce over roll ups, sprinkle with mozzarella and Parmesan, cover with foil, and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden. Let cool for 5 minutes before serving.
- Garnish with parsley and serve immediately.
