Step-by-Step Instructions for Strawberry Oatmeal Bars
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a medium bowl, combine oats, flour, sugar, ginger, and salt. Stir until blended.
- Add melted butter and mix until the mixture forms clumps. Reserve 1/2 cup for topping, press the rest into the bottom of the pan.
- In another bowl, combine strawberries, cornstarch, lemon juice, and sugar until evenly coated.
- Spread the strawberry filling over the crust, then crumble reserved oat mixture on top.
- Bake for 30-35 minutes, until golden brown and filling bubbles.
- cool completely in the pan. For optional glaze, whisk powdered sugar, vanilla, and milk until smooth, drizzle over bars.
- Lift bars out using parchment, slice and serve.
