Ingredients

For the Oat Base
  • 1 cup old-fashioned rolled oats Essential for chewy texture; swap for gluten-free oats if needed.
  • 3/4 cup white whole wheat flour Adds body; can use all-purpose or a 1:1 gluten-free flour.
  • 1/2 cup light brown sugar Sweetens and adds moisture; coconut sugar makes a healthier alternative.
  • 1 teaspoon ground ginger Brings warmth; feel free to skip if you prefer a milder flavor.
  • 1/4 teaspoon kosher salt Enhances the overall taste; a must for balance.
  • 1/2 cup unsalted butter Binds the mixture and adds richness; melted coconut oil works for a vegan option.
For the Strawberry Filling
  • 10 ounces diced strawberries Provides moisture and sweetness; frozen works too!
  • 1 tablespoon cornstarch Thickens the filling; omit for a juicier result if desired.
  • 1 tablespoon fresh lemon juice Brightens the flavors; juice of about half a lemon works wonders.
  • 2 tablespoons granulated sugar Sprinkle over strawberries; adjust to taste based on sweetness.
For the Glaze (Optional)
  • 1 cup powdered sugar Adds a sweet finish; can use a sugar substitute for a healthier option.
  • 1 teaspoon vanilla extract Infuses a lovely flavor; essential for that warm touch.
  • 2 tablespoons milk Any milk works; helps create a smooth and drizzlable glaze.
