For the Bites
  • 1 cup strawberries washed and hulled
  • 1 cup Greek yogurt creamy base, regular yogurt can be used
  • 1-2 tablespoons honey for sweetness
Optional Toppings
  • 1/4 cup chopped pistachios for crunch

Equipment

  • Food Processor
  • Large bowl
  • piping bag or resealable plastic bag
  • Baking sheet
  • Parchment paper

Method

Step-by-Step Instructions
  1. Start by washing and hulling about 1 cup of fresh strawberries. Blend them with 1-2 tablespoons of honey until smooth, resembling a thick smoothie.
  2. In a large bowl, scoop in 1 cup of creamy Greek yogurt. Gently fold the strawberry puree into the yogurt until well combined.
  3. Fill a piping bag or resealable plastic bag with the strawberry yogurt mixture. Line a baking sheet with parchment paper.
  4. Squeeze the yogurt mixture onto the parchment-lined baking sheet to form bite-sized dollops, roughly 1 inch in diameter.
  5. Place the baking sheet in the freezer and allow the bites to freeze for about 1 hour until firm.
  6. Sprinkle chopped pistachios or shredded coconut over the dollops just before freezing for added flavor.
  7. Once frozen solid, transfer the bites to an airtight container for storage.
