  • 2 cloves Garlic minced
  • 1 tbsp Worcestershire Sauce low-sodium versions recommended
  • 1 tbsp Italian Seasoning can substitute with dried oregano and basil
  • 1 cup Sour Cream or Greek yogurt as a substitute
  • 1 can Cream of Mushroom Soup homemade variety can be used
  • 1 cup Corn fresh or frozen
For the Topping
  • 1 cup Cheddar Cheese or Monterey Jack/Pepper Jack for spice
  • 32 oz Frozen Tater Tots for a crispy topping
  • to taste Salt go with low-sodium options if preferred
  • to taste Pepper go with low-sodium options if preferred
  • 1/4 cup Chopped Scallions or chives for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and position the oven rack in the top third.
  2. In a large skillet over medium-high heat, sauté the ground beef and chopped onions for 7 to 8 minutes.
  3. Once browned, mix in minced garlic, Worcestershire sauce, and Italian seasoning. Cook for an additional minute.
  4. Lower the heat and add sour cream, cream of mushroom soup, drained corn, and ½ cup of grated cheddar cheese. Stir together for 1 to 2 minutes.
  5. Transfer the beef mixture into a 9x13 casserole dish, spreading it evenly across the bottom.
  6. Sprinkle the remaining cheddar cheese on top, then arrange the frozen tater tots in a single layer over the cheese.
  7. Bake in the preheated oven for about 45 minutes, until the tater tots are golden brown and the cheese is bubbly.
  8. Remove from the oven and sprinkle with chopped scallions before serving.
