  • 1 cup Ube Can substitute with rehydrated ube powder
  • 1 cup All-purpose flour Can replace with gluten-free blend
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 3/4 cup Sugar Experiment with types of sugar
  • 1/2 cup Butter Should be softened
  • 2 large Eggs Room temperature preferred
  • 1 tsp Ube extract Essential for vibrant color
  • 1/2 cup Milk Non-dairy milk can be used
For the Frosting
  • 1/2 cup Butter At room temperature
  • 2 cups Powdered sugar Sift for best results
  • 1/2 cup Ube
  • 1 tsp Purple food coloring Optional

Method
 

Cupcake Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tray with cupcake liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well, then incorporate the ube puree and ube extract.
  5. Gradually mix the dry ingredients with the wet batter, alternating with milk.
  6. Evenly divide the batter into the prepared cupcake liners.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Cool in the tray for 5 minutes before transferring to a wire rack.
  9. Beat the softened butter until creamy, then add powdered sugar, ube puree, and optional coloring.
  10. Once cool, frost each cupcake using a piping bag.
