Ingredients
  

For the Salad
  • 4 cups Romaine Lettuce can substitute with mixed greens or spinach
  • 1 pound Chicken Breast grilled or rotisserie chicken works well
  • 1 cup Fresh Strawberries substitute with other berries for a mixed berry salad
  • 1/2 cup Blueberries optional but recommended
  • 1/4 cup Red Onion soak in water to mellow flavor if desired
  • 1/2 cup Pecans can be replaced with walnuts or cashews
  • 1/2 cup Feta Cheese substitute with goat cheese or dairy-free option
For the Dressing
  • 1/4 cup Poppy Seed Dressing homemade is recommended

Method
 

Dressing Preparation
  1. In a mixing bowl, combine fresh lemon juice, honey, and poppy seeds. Whisk until well blended, then slowly drizzle in vegetable oil while whisking until smooth. Chill the dressing in the refrigerator for at least 20 minutes.
Chicken Preparation
  1. Season raw chicken breast with salt and pepper, then grill or pan-sear over medium heat for 6-7 minutes per side, until internal temperature reaches 165°F. Allow to rest for 5 minutes before slicing into thin strips.
Salad Assembly
  1. Rinse and dry romaine lettuce, then tear into bite-sized pieces and place in a large serving bowl.
  2. Layer sliced chicken over the lettuce, followed by quartered strawberries and a sprinkle of blueberries.
  3. Slice red onion and sprinkle over the top, along with chopped pecans.
  4. Crumble feta cheese over the salad, then drizzle with the chilled poppy seed dressing and toss gently.
