Step-by-Step Instructions for Strawberry Matcha Sago
- Boil 4 cups of water in a pot and add 1 cup of sago pearls. Cook for about 15 minutes until mostly transparent, then cover and let sit for 10-15 minutes.
- Strain the sago pearls using a fine mesh sieve and rinse under cold running water to halt cooking. Keep submerged in fresh water.
- In a heat-proof bowl, sift 2 tablespoons of matcha powder and whisk in 1 cup of hot water until smooth. Combine with 1 cup of your preferred milk.
- In a large mixing bowl, combine cooled sago pearls, 1/2 cup of evaporated milk, 1/4 cup of condensed milk, matcha milk, and diced strawberries. Fold in 1/2 cup of coconut jelly.
- Spoon the mixture into individual cups or bowls and serve immediately to maintain texture and flavor.

Notes
For best results, use fresh sago pearls and serve immediately. Dairy-free options work well with coconut or almond milk.
