- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped onion and sauté for about 5 minutes until soft and translucent.
- Add 2-3 cloves of minced garlic, cooking for an additional minute until fragrant.
- Stir in 1 pound of ground beef, browning it completely while mixing in 2 tablespoons of taco seasoning, salt, and pepper.
- Incorporate 1 can of drained diced tomatoes, simmering for 2 minutes.
- In a mixing bowl, combine 1 can of cream of chicken soup and 1 cup of sour cream. Whisk together until smooth.
- Preheat your oven to 180°C (350°F). In a greased baking dish, layer approximately 2 cups of crushed Doritos at the bottom.
- Spoon half of the beef mixture over the chips, followed by half of the creamy layer and sprinkle with 1 cup of shredded cheddar cheese.
- Repeat the layering process for the second half of the ingredients.
- Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
