Cooking Steps
  1. In a medium bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  2. In a large mixing bowl, combine Greek yogurt, eggs, milk, vanilla extract, and melted butter. Mix until smooth.
  3. Pour the dry ingredients into the wet mixture and gently whisk until just combined; it’s okay if there are a few lumps.
  4. Preheat a nonstick skillet over medium heat and lightly grease with butter or oil.
  5. Pour batter onto the skillet, using a 1/4 cup measuring cup. Cook for about 2 minutes until edges dry and bubbles form.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with remaining batter, adjusting heat as needed, and serve with your favorite toppings.
