  • 2 large Eggs room temperature
  • 1/2 cup Melted Butter or coconut oil for dairy-free
  • 2 cups Almond Flour do not substitute with regular flour
  • 1/2 cup Erythritol or other keto-friendly sweetener
  • 1 tbsp Baking Powder ensure it's fresh
  • 1 tsp Cinnamon optional, for flavor
  • 1/2 cup Crushed Walnuts can substitute with pecans or omit

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F).
  2. In a large mixing bowl, combine the room temperature eggs, mashed very ripe bananas, and melted butter until smooth.
  3. In a separate bowl, whisk together almond flour, erythritol, baking powder, and cinnamon.
  4. Gradually add dry ingredients to wet mixture, stirring gently until well combined.
  5. Fold in crushed walnuts, reserving some for garnishing the top of the bread.
  6. Line a loaf tin with parchment paper, pour the batter in, and sprinkle reserved walnuts on top.
  7. Bake for approximately 40 minutes, checking around 30 minutes for doneness.
  8. Insert a toothpick into the center to check if it comes out clean. Allow cooling in the pan for at least 30 minutes.
