- In a medium bowl, add 2 cups of plain Greek yogurt, 1 cup of natural peanut butter, 2 tablespoons of honey, 1 teaspoon of vanilla extract, and a pinch of sea salt. Stir these ingredients together until smooth and creamy, about 2-3 minutes.
- Line a baking sheet with parchment paper to prevent sticking. Choose a rimmed baking sheet to contain any melting.
- Using a small ice cream scoop or tablespoon, portion out the yogurt mixture into roughly 1-inch rounds, spacing them about an inch apart.
- Optionally, sprinkle mini chocolate chips or drizzle melted dark chocolate over the tops of the rounds.
- Carefully place the baking sheet in the freezer and let it chill for 2-3 hours until firm.
- Once frozen, use a spatula to lift each bite off the parchment paper and transfer them to a freezer-safe container.
