Method
 

Step-by-Step Instructions
  1. In a medium bowl, add 2 cups of plain Greek yogurt, 1 cup of natural peanut butter, 2 tablespoons of honey, 1 teaspoon of vanilla extract, and a pinch of sea salt. Stir these ingredients together until smooth and creamy, about 2-3 minutes.
  2. Line a baking sheet with parchment paper to prevent sticking. Choose a rimmed baking sheet to contain any melting.
  3. Using a small ice cream scoop or tablespoon, portion out the yogurt mixture into roughly 1-inch rounds, spacing them about an inch apart.
  4. Optionally, sprinkle mini chocolate chips or drizzle melted dark chocolate over the tops of the rounds.
  5. Carefully place the baking sheet in the freezer and let it chill for 2-3 hours until firm.
  6. Once frozen, use a spatula to lift each bite off the parchment paper and transfer them to a freezer-safe container.
