  • 4 tablespoons Butter or plant-based butter for vegan option
  • 2 tablespoons Olive oil
  • 4 cloves Garlic minced
  • 1 teaspoon Salt add right before cooking
  • 1 teaspoon Pepper
  • 1 handful Fresh herbs like parsley, basil, or dill (optional)
  • 1 juice Lemon squeeze on after grilling (optional)
For Extra Flavor
  • 1 teaspoon Red pepper flakes or cayenne (optional)
  • 1/4 cup Grated Parmesan cheese optional, sprinkle after grilling
  • 2 tablespoons BBQ sauce optional, brush on during last minute of grilling

Method
 

Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C).
  2. Wash and slice the zucchini into 3/4-inch thick pieces. Soak wooden skewers in water for 20-30 minutes if using.
  3. Melt the butter in a saucepan, add minced garlic and stir until fragrant for about 2-3 minutes. Brush onto the skewered zucchini.
  4. Sprinkle salt and pepper over the skewers just before grilling.
  5. Grill skewers for 8-12 minutes, flipping every 2-3 minutes until lightly charred.
  6. Brush with remaining garlic butter during the last few minutes of grilling.
  7. Finish with fresh herbs and lemon juice before serving.
