Ingredients

For the Roast
  • 1 whole Beef Tenderloin Make sure it's trimmed and tied by your butcher.
  • 2 tablespoons Olive Oil Opt for high-quality, light olive oil for the best results.
  • 2 teaspoons Kosher Salt Use sparingly if the beef is pre-seasoned.
  • 1 teaspoon Freshly Ground Black Pepper Adjust according to your taste preferences.
For the Herb Butter
  • 1/2 cup Unsalted Butter Always use unsalted for better seasoning control.
  • 4 cloves Garlic Cloves Skip pre-minced options for the best taste.
  • 2 tablespoons Fresh Rosemary You can substitute with 1/3 the amount of dried if fresh is unavailable.
  • 2 tablespoons Fresh Thyme Dried thyme can be used in place of fresh if necessary.

Equipment

  • cast iron skillet

Method

Step-by-Step Instructions
  1. Start by patting the beef tenderloin dry with paper towels, ensuring it’s free of moisture to achieve a beautiful sear. Trim any silver skin and tie the tenderloin with butcher's twine every 1-2 inches for even cooking.
  2. In a medium bowl, combine softened unsalted butter with the minced garlic, finely chopped rosemary, and thyme. Mix until fully blended.
  3. Drizzle a little olive oil over the prepared beef tenderloin and rub it all over. Generously season with kosher salt and freshly ground black pepper.
  4. Preheat a cast-iron skillet over medium-high heat for about 5 minutes. Place the tenderloin in the skillet and sear on all sides for about 2-3 minutes each.
  5. Remove the pan from heat and slather the herb butter over the tenderloin, ensuring it coats the meat evenly.
  6. Transfer the skillet to a preheated oven set to 425°F (220°C). Roast the tenderloin for approximately 25-30 minutes.
  7. After roasting, remove the tenderloin from the oven and tent it loosely with foil. Allow it to rest for 10-15 minutes.
