- Start by patting the beef tenderloin dry with paper towels, ensuring it’s free of moisture to achieve a beautiful sear. Trim any silver skin and tie the tenderloin with butcher's twine every 1-2 inches for even cooking.
- In a medium bowl, combine softened unsalted butter with the minced garlic, finely chopped rosemary, and thyme. Mix until fully blended.
- Drizzle a little olive oil over the prepared beef tenderloin and rub it all over. Generously season with kosher salt and freshly ground black pepper.
- Preheat a cast-iron skillet over medium-high heat for about 5 minutes. Place the tenderloin in the skillet and sear on all sides for about 2-3 minutes each.
- Remove the pan from heat and slather the herb butter over the tenderloin, ensuring it coats the meat evenly.
- Transfer the skillet to a preheated oven set to 425°F (220°C). Roast the tenderloin for approximately 25-30 minutes.
- After roasting, remove the tenderloin from the oven and tent it loosely with foil. Allow it to rest for 10-15 minutes.
