  • 6 cloves Garlic Minced, plus a halved head for stuffing.
  • 1 teaspoon Paprika Optional.
For the Herbs
  • 1/4 cup Parsley Fresh, chopped.
  • 1 sprig Rosemary Tied for stuffing.
  • 1 sprig Thyme Tied for stuffing.
For Seasoning

  • 1 quarter Lemon Quartered, for stuffing.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare a roasting pan with olive oil.
  2. Gently rinse the whole chicken under cold water and pat dry with paper towels.
  3. In a small bowl, combine olive oil, melted unsalted butter, and lemon juice, then coat the chicken.
  4. Mix softened unsalted butter with minced garlic, chopped rosemary, thyme, and paprika for the rub.
  5. Stuff the cavity of the chicken with the halved garlic head, sprigs of rosemary and thyme, and quartered lemon.
  6. Roast the chicken in the prepared pan for 1 to 1.25 hours or until golden brown.
  7. Broil for 2-3 minutes for extra crispiness.
  8. Let the chicken rest for 15 minutes before carving.
