Preparation
- Preheat your oven to 425°F (220°C) and prepare a roasting pan with olive oil.
- Gently rinse the whole chicken under cold water and pat dry with paper towels.
- In a small bowl, combine olive oil, melted unsalted butter, and lemon juice, then coat the chicken.
- Mix softened unsalted butter with minced garlic, chopped rosemary, thyme, and paprika for the rub.
- Stuff the cavity of the chicken with the halved garlic head, sprigs of rosemary and thyme, and quartered lemon.
- Roast the chicken in the prepared pan for 1 to 1.25 hours or until golden brown.
- Broil for 2-3 minutes for extra crispiness.
- Let the chicken rest for 15 minutes before carving.
