- Preheat your oven to 400°F (200°C).
- Wash and chop 1.5 lbs of garlic red potatoes into 1-inch pieces.
- Drizzle 3 tbsp of olive oil, sprinkle 1 tsp of salt, and 0.5 tsp of black pepper over the potatoes and coat evenly.
- Spread the seasoned potatoes on a baking sheet and roast for about 15 minutes until pale golden and tender.
- Trim the ends of 1 lb of fresh green beans.
- In a small bowl, whisk together 3 tbsp of melted butter, 5 minced garlic cloves, and 1 tsp of thyme.
- After the initial roast, push the potatoes to one side and add the green beans. Drizzle with the garlic butter mixture.
- Roast the vegetables together for an additional 10 minutes, watching closely.
- Sprinkle 0.25 cup of grated Parmesan cheese over the vegetables as soon as they come out of the oven.
