Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop 1.5 lbs of garlic red potatoes into 1-inch pieces.
  3. Drizzle 3 tbsp of olive oil, sprinkle 1 tsp of salt, and 0.5 tsp of black pepper over the potatoes and coat evenly.
  4. Spread the seasoned potatoes on a baking sheet and roast for about 15 minutes until pale golden and tender.
  5. Trim the ends of 1 lb of fresh green beans.
  6. In a small bowl, whisk together 3 tbsp of melted butter, 5 minced garlic cloves, and 1 tsp of thyme.
  7. After the initial roast, push the potatoes to one side and add the green beans. Drizzle with the garlic butter mixture.
  8. Roast the vegetables together for an additional 10 minutes, watching closely.
