Preparation
- Prepare all ingredients: mince garlic, chop shallots, and cut mozzarella into cubes.
- Season the chicken fillets with salt, black pepper, garlic powder, and paprika.
- Heat skillet over medium-high heat with olive oil and butter, then sauté the seasoned chicken for 5 minutes on each side.
- In the same skillet, add minced garlic and chopped shallots, sauté for about 2 minutes.
- Deglaze with white wine, simmer for 2 minutes.
- Mix in salt, black pepper, dried basil, and tomato paste, cook for 1 minute.
- Stir in chicken broth and canned cherry tomatoes, bring to a boil, then simmer for 5 minutes.
- Return chicken to the skillet, add fresh basil and mozzarella, and simmer for another 5 minutes.
- For a golden top, transfer to preheated oven at 400°F (200°C) for 10 minutes.
