  • 1 large Egg For a vegan option, mix 1 tbsp flaxseed meal with 3 tbsp water.
For the Flavor
  • 1 medium Onion Sauté to deepen flavor.
  • 2 cloves Garlic Fresh for best flavor.
  • 1 cup Bell Peppers Chopped, can use any color.
  • 1 can Black Beans Drained.
  • 1 cup Frozen Corn Can substitute with fresh or drained canned corn.

  • ¼ cup Cilantro Optional; can use parsley.
  • 1 cup Cheddar Cheese Or vegan cheese.
  • ½ cup Breadcrumbs Panko or regular; use gluten-free if needed.
For the Spice & Seasoning
  • 1 teaspoon Chili Powder Adjust according to heat preference.
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • as desired Hot Sauce Optional.

Method
 

Instructions for Genius Quinoa Twists
  1. Rinse quinoa under cold water. Combine it with vegetable broth in a saucepan, bring to a boil, reduce heat, and simmer for 15 minutes. Fluff and cool slightly.
  2. Heat olive oil in a skillet, add diced onion, and sauté for 5 minutes. Stir in garlic, bell peppers, corn, and black beans. Cook for an additional 5 minutes, then add cilantro, salt, and pepper.
  3. In a mixing bowl, combine cooled quinoa and sautéed mixture. Fold in cheddar cheese, beaten egg, and breadcrumbs. Add spices and mix thoroughly.
  4. Shape small portions into twists, about 4 inches long, and place on a lined baking sheet.
  5. Preheat oven to 375°F (190°C) and bake twists for 20-25 minutes, flipping halfway.
  6. Let cool briefly, then serve warm with salsa, guacamole, or hot sauce.
