  • 1 cup Greek Yogurt plain and unsweetened
  • 3 cloves Minced Garlic fresh for best flavor
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 tablespoon Dried Oregano
  • 2 tablespoons Olive Oil

For the Kebabs
  • 1.5 pounds Chicken Breast or Thighs cut into 1-inch chunks
  • Optional Vegetables (Bell Peppers, Onions) for added color and crunch

Method
 

Preparation Steps
  1. In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, dried oregano, olive oil, and season with salt and pepper to taste. Cut chicken into chunks and coat with the marinade. Cover and refrigerate for at least 1 hour (overnight is best).
  2. Soak wooden skewers in water for at least 30 minutes to prevent burning. If using metal skewers, ensure they are clean.
  3. Thread marinated chicken onto skewers, alternating with optional vegetable slices if desired. Leave space at the end for easy handling.
  4. Preheat grill to medium-high heat around 375°F (190°C).
  5. Grill kebabs for about 10-12 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F (75°C).
  6. Let kebabs rest for a few minutes, then serve garnished with fresh herbs and lemon wedges, alongside tzatziki sauce and salad or couscous.
