Step-by-Step Instructions
  1. In a small bowl, combine onion powder, garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper. Mix well to create a fragrant spice rub. Pat the chicken thighs dry and coat them with the rub. Marinate for at least 30 minutes.
  2. In a saucepan over medium heat, combine diced peaches and sugar, bringing to a gentle boil. Stir for 5 minutes until peaches soften. Add barbecue sauce and bourbon, then simmer for 5 minutes.
  3. Use an immersion blender to purée the sauce to a smooth consistency. Set aside to keep warm for later glazing.
  4. Preheat the grill to medium-high heat (around 400°F). Grill the chicken thighs for 3-5 minutes per side until they reach an internal temperature of 165°F.
  5. Brush the bourbon peach BBQ sauce onto the chicken and grill for an additional minute on each side to caramelize.
  6. If desired, grill halved peaches brushed with barbecue sauce for 1-2 minutes per side.
