  • Small bowl

Method

Step-by-Step Instructions for Grilled Onion Summer Side
  1. Start by peeling the large red onions and slicing them into ½-inch thick rounds. In a large bowl, whisk together a few tablespoons of extra virgin olive oil, kosher salt, and black pepper. Add the onion rounds and toss to coat them evenly.
  2. Preheat your grill to medium-high heat, about 400°F (200°C). This temperature is crucial for achieving those beautiful grill marks.
  3. Carefully place the onion rounds on the grill grates or in a grill basket. Grill for about 5-7 minutes on one side, watching for dark grill marks.
  4. While the onions are grilling, prepare the balsamic glaze by whisking together balsamic vinegar, maple syrup, and garlic powder in a small bowl.
  5. During the last 2 minutes of grilling, brush the balsamic glaze generously onto both sides of the onions.
  6. Once cooked, remove the onions from the grill and let them rest for about a minute before serving warm, optionally topped with fresh herbs.
