Preparation Steps
  1. Thoroughly scrub the Russet potatoes under cold running water, then pat dry and cut into wedges.
  2. Bring salted water to a boil in a large pot, add potato wedges, and parboil for about 10 minutes.
  3. In a mixing bowl, combine avocado oil, garlic powder, paprika, herbs, salt, pepper, and cayenne.
  4. Toss the cooled potato wedges in the seasoning mixture, coating evenly.
  5. Preheat the grill to 475-500°F (245-260°C) and ensure the grates are clean.
  6. Place seasoned potato wedges on the grill cut side down and grill for 10-15 minutes, flipping every 3-5 minutes.
  7. Remove from the grill, toss with leftover seasoning if desired, and serve hot.
