- Season salmon fillets with salt and pepper on all sides. Let sit for about 10 minutes.
- Cut the lemon in half. Reserve half for juicing and slice the other half for grilling.
- Char lemon halves cut side down on the griddle for about 1 minute, then remove.
- Place salmon fillets skin-side up on the griddle and cook for approximately 5 minutes without moving.
- Gently flip the fillets, drizzle with charred lemon juice, and lay charred slices on top. Cook an additional 7 to 10 minutes.
- Check doneness by ensuring salmon flakes easily and reaches 145°F.
- Transfer cooked salmon to a plate and let rest for about 5 minutes before serving.
