Ingredients
  

For the Kabobs
  • 1 pound Scallops fresh or thawed for best flavor
  • 1 pound Large Shrimp peeled and deveined for convenience
For the Marinade
  • 1/4 cup Olive Oil can substitute with avocado oil
  • 2 tablespoons Lemon Juice can substitute with lime juice
  • 2 tablespoons Lime Juice extra lemon juice works in a pinch
  • 2 cloves Garlic finely chopped or use garlic powder
  • 1 teaspoon Lemon Pepper can substitute with lemon zest and black pepper
  • 1 teaspoon Kosher Salt or sea salt
  • 1/4 teaspoon Cayenne Pepper omit for milder dish
Optional Additions
  • 1 cup Vegetables bell peppers or cherry tomatoes
  • 1 cup Pineapple Chunks for a sweet tropical twist

Method
 

Step-by-Step Instructions
  1. In a large Ziploc bag, combine scallops and shrimp. Mix olive oil, lemon juice, lime juice, garlic, lemon pepper, kosher salt, and cayenne pepper in a bowl and pour into the bag, reserving some for basting. Seal and marinate for 15-30 minutes.
  2. Soak wooden skewers in water for at least one hour to prevent burning. After soaking, dry them thoroughly. Once marinating is complete, drain seafood, discarding marinade.
  3. Thread the marinated scallops and shrimp onto the soaked skewers, alternating for full appearance and even cooking.
  4. Preheat grill to medium-hot (375°F to 400°F).
  5. Grill skewers for 3-5 minutes on each side, basting with reserved marinade halfway through.
  6. Check doneness: shrimp should be light pink and scallops opaque. Remove from grill.
  7. Serve immediately on a plate, enjoying them fresh and vibrant.
