- In a large bowl, combine cubed sirloin steak with olive oil, smoked paprika, garlic powder, salt, and pepper. Cover and let marinate for at least 30 minutes.
- In a separate bowl, season shrimp with olive oil, salt, and pepper. Let sit while preparing the garlic butter sauce.
- In a small saucepan, melt unsalted butter over medium heat. Add minced garlic and cook for 1-2 minutes. Remove from heat and stir in parsley, lemon juice, and a pinch of salt.
- Assemble skewers by alternating marinated steak and seasoned shrimp. Aim for about 4-5 pieces of steak followed by 2-3 shrimp per skewer.
- Preheat the grill to medium-high heat (about 400°F). Grill skewers for 3-4 minutes on each side.
