- Begin by trimming the ends off the zucchinis, then slice them lengthwise into 1/2-inch strips. Sprinkle the strips with salt and let them sit for about 20 minutes to draw out excess moisture.
- While the zucchini is resting, preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
- Once the grill is preheated, brush both sides of the zucchini strips with olive oil or avocado oil.
- Place the zucchini strips on the hot grill and cook them for about 10-15 minutes, flipping halfway through.
- After grilling, carefully remove the zucchini from the grill and transfer them to a serving platter. Crumble goat cheese over the hot zucchini, sprinkle with basil, drizzle with honey, and add salt and pepper to taste.
