Preparation Instructions
  1. Begin by trimming the ends off the zucchinis, then slice them lengthwise into 1/2-inch strips. Sprinkle the strips with salt and let them sit for about 20 minutes to draw out excess moisture.
  2. While the zucchini is resting, preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
  3. Once the grill is preheated, brush both sides of the zucchini strips with olive oil or avocado oil.
  4. Place the zucchini strips on the hot grill and cook them for about 10-15 minutes, flipping halfway through.
  5. After grilling, carefully remove the zucchini from the grill and transfer them to a serving platter. Crumble goat cheese over the hot zucchini, sprinkle with basil, drizzle with honey, and add salt and pepper to taste.
