Step-by-Step Instructions for Spicy Black Bean Soup
  1. Prepare Poblano Crema: Char poblano peppers over an open flame or under a broiler until blackened, about 5–7 minutes. Cool, peel, and blend with crema, lime zest, cilantro, salt, and pepper until smooth.
  2. Soak Beans: Rinse black beans, cover with water and a pinch of kosher salt. Soak overnight at room temperature.
  3. Sauté Aromatics: Heat olive oil in a large pot, add diced onion, bell pepper, and chopped poblano. Cook for 5–7 minutes, then add minced garlic and sauté until fragrant.
  4. Cook the Soup: Stir in chipotle peppers, ancho chili powder, paprika, and cumin. Add soaked beans, broth, bouillon, and bay leaf. Bring to boil, then simmer for 1.5–2 hours.
  5. Blend for Consistency: Remove bay leaf and stir in vinegar. Use an immersion blender to blend to desired consistency. Simmer for an additional 5 minutes.
  6. Serve: Ladle soup into bowls, top with poblano crema, cilantro, and lime wedges.
