  • 1 cup old-fashioned rolled oats Avoid instant oats.
  • 1 cup vanilla almond milk Substitute with any non-dairy milk.
  • 2 tablespoons maple syrup Can swap with agave syrup or honey.
  • 1 tablespoon chia seeds Rich in fiber and omega-3s.
  • 1 teaspoon vanilla extract Almond extract can be used for variation.
  • 1 teaspoon ground cinnamon Freshly ground is preferred.
  • 1/8 teaspoon salt Enhances sweetness.
For the Apple Compote
  • 1 tablespoon vegan butter or coconut oil For sautéing the apples.
  • 2 cups fresh apples Diced, can substitute with pears or peaches.
  • 1 tablespoon corn starch Arrowroot powder can be substituted.

Method
 

Preparation Steps
  1. Combine all oats ingredients in a bowl and mix until well combined.
  2. Cover and refrigerate overnight (or at least 8 hours).
  3. Prepare apple compote by melting vegan butter, then sauté diced apples with cinnamon and maple syrup for 3-5 minutes.
  4. Thicken compote by mixing corn starch with water, then adding to apples and cooking until thickened.
  5. Cool compote slightly to keep the contrast in temperature when serving.
  6. Assemble oats in bowls or jars, topping with warm apple compote.
