  2. In a mixing bowl, combine ricotta cheese, grated Parmesan, fresh spinach, and selected herbs. Add garlic powder, salt, and pepper, stirring until the mixture is uniform.
  3. Fill each chicken pocket with the ricotta mixture and secure with toothpicks or kitchen twine.
  4. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken rolls for about 3-4 minutes on each side until golden-brown.
  5. Transfer the rolls to a baking dish, pour marinara sauce over, and bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
