- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan with paper liners.
- In a large mixing bowl, whisk together two large eggs, softened unsalted butter, honey, fresh orange juice, and cocoa powder until smooth.
- Gently fold in all-purpose flour, baking powder, and the zest of one orange until the flour is no longer visible.
- Spoon the batter into the muffin liners, filling each one about two-thirds full.
- Place the muffin pan in the oven and bake for 12-13 minutes, or until a toothpick comes out clean.
- Remove the muffin pan from the oven and allow it to cool for about 5 minutes before removing the muffins.
- Prepare the cream cheese frosting by blending cream cheese and honey until smooth.
- Pipe the cream cheese frosting on top of each cooled muffin and finish with a fresh strawberry.
