- Preheat your oven to 350°F (175°C) and prepare a deep baking dish with nonstick spray.
- Cream together granulated sugar, brown sugar, and softened butter until light and fluffy, about 2-3 minutes. Add eggs one at a time, followed by vanilla, buttermilk, maple syrup, and mashed bananas.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
- Fold the dry ingredients into the wet ingredients gently, ensuring no overmixing.
- Pour the batter into the prepared dish and bake for 45-55 minutes until a toothpick comes out clean.
- In a saucepan, melt butter and brown sugar over medium heat, then stir in heavy cream and vanilla, allowing to simmer for 5 minutes.
- Once the cake has cooled slightly, poke holes in the top and pour the warm toffee sauce over it, letting sit for at least an hour.
- Slice the cake, serve with extra toffee sauce or vanilla ice cream, and enjoy!
