  • 0.5 cups Granulated Sugar
  • 0.5 cups Brown Sugar increase for richer taste
  • 2 medium Mashed Bananas about 2 ripe bananas
  • 0.25 cups Maple Syrup or honey/agave
  • 1 tsp Vanilla Extract
  • 2 large Eggs
  • 0.5 cups Buttermilk or regular milk with vinegar
For the Toffee Sauce
  • 0.5 cups Butter
  • 1 cup Brown Sugar
  • 1 cup Heavy Cream
  • 1 tsp Vanilla Extract

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish with nonstick spray.
  2. Cream together granulated sugar, brown sugar, and softened butter until light and fluffy, about 2-3 minutes. Add eggs one at a time, followed by vanilla, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
  4. Fold the dry ingredients into the wet ingredients gently, ensuring no overmixing.
  5. Pour the batter into the prepared dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. In a saucepan, melt butter and brown sugar over medium heat, then stir in heavy cream and vanilla, allowing to simmer for 5 minutes.
  7. Once the cake has cooled slightly, poke holes in the top and pour the warm toffee sauce over it, letting sit for at least an hour.
  8. Slice the cake, serve with extra toffee sauce or vanilla ice cream, and enjoy!
