Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of chicken thighs and sauté for about 5–7 minutes until browned and cooked through. Remove the chicken and set aside.
  2. In the same skillet, lower the heat and add 1/2 cup soy sauce, 1/4 cup brown sugar, 1/4 cup bourbon, 2 cloves of minced garlic, 1 tablespoon of grated ginger, and 1/2 teaspoon of crushed red pepper flakes. Stir and simmer for 3–4 minutes.
  3. Make a slurry by mixing 1 tablespoon of cornstarch with 2 tablespoons of water until smooth. Gradually pour into the sauce while whisking until it thickens, about 2 minutes.
  4. Return the cooked chicken to the skillet, swirling to coat in the sauce. Let it simmer for an additional 2–3 minutes.
  5. Remove from heat, sprinkle with chopped green onions, and serve hot over jasmine rice or alongside stir-fried vegetables.
