- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of chicken thighs and sauté for about 5–7 minutes until browned and cooked through. Remove the chicken and set aside.
- In the same skillet, lower the heat and add 1/2 cup soy sauce, 1/4 cup brown sugar, 1/4 cup bourbon, 2 cloves of minced garlic, 1 tablespoon of grated ginger, and 1/2 teaspoon of crushed red pepper flakes. Stir and simmer for 3–4 minutes.
- Make a slurry by mixing 1 tablespoon of cornstarch with 2 tablespoons of water until smooth. Gradually pour into the sauce while whisking until it thickens, about 2 minutes.
- Return the cooked chicken to the skillet, swirling to coat in the sauce. Let it simmer for an additional 2–3 minutes.
- Remove from heat, sprinkle with chopped green onions, and serve hot over jasmine rice or alongside stir-fried vegetables.
