  • 1 teaspoon Onion Powder Optional if using fresh onions.
  • 1 teaspoon Salt Adjust to taste.
Casserole Layers
  • 8 oz Canadian Bacon Substitute with ham or turkey bacon if desired.
  • 6 English Muffins Day-old muffins work best.
Toppings
  • 1 teaspoon Paprika Use as optional garnish.
  • 1 packet Hollandaise Sauce Mix Can use homemade for richer taste.
  • 1/2 cup Butter Can replace with margarine.

Method
 

Preparation
  1. Grease a 9x13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together milk, eggs, green onions, onion powder, and salt.
  3. Layer half of the diced Canadian bacon in the baking dish, add toasted English muffins, and top with remaining bacon.
  4. Pour the egg mixture over the layers and let soak.
  5. Cover and refrigerate for at least 8 hours or overnight.
  6. Preheat the oven to 375°F (190°C). Sprinkle paprika on top and cover with foil. Bake for 30 minutes, then remove foil and bake for additional 15 minutes.
  7. Prepare the Hollandaise sauce by whisking milk with the Hollandaise mix and melting butter until thickened.
  8. Slice into 10 portions and drizzle with Hollandaise sauce to serve.
