  • 1 loaf Ciabatta Bread 12-14" long loaf
  • 8 oz Provolone Cheese
  • 8 oz Mortadella thinly sliced
  • 8 oz Capocollo or prosciutto/salami
  • 8 oz Genoa Salami
  • 8 oz Soppressata or any hard salami
  • 1 cup Marinated Onions marinate for at least 30 minutes
  • 2 medium Tomatoes ripe
  • 8 oz Fresh Mozzarella torn into pieces
  • 1 cup Shredded Iceberg Lettuce
  • 1 cup Arugula
For the Spread
  • 1/2 cup Mayonnaise full-fat preferred
  • 2 tbsp Calabrian Chili Paste adjust to taste
Seasoning
  • 1 tsp Flaky Sea Salt
  • 1 tsp Black Pepper

Step-by-Step Instructions for Italian Picnic Sandwich
  1. Marinate the onions by combining sliced red onion with olive oil, red wine vinegar, dried oregano, and salt. Let sit for 30 minutes.
  2. Prepare the spicy mayo by blending mayonnaise with Calabrian chili paste until smooth.
  3. Slice ciabatta loaf in half lengthwise.
  4. Spread the spicy mayo on both cut sides of the ciabatta.
  5. Layer provolone cheese, then mortadella, capocollo, Genoa salami, and soppressata on the bottom half.
  6. Add sliced tomatoes, seasoning with salt and pepper, followed by mozzarella, marinated onions, lettuce, and arugula.
  7. Drizzle remaining marinated onion dressing over the sandwich, and place the top half back on.
  8. Cut the sandwich into 6-8 individual pieces and serve.
