Step-by-Step Instructions for Irresistible Nasi Goreng
  1. In a medium bowl, combine bite-sized pieces of boneless chicken with kecap manis, ensuring they're well-coated. Allow to marinate for at least 15 minutes.
  2. Using a mortar and pestle, grind together peeled shallots, fresh garlic, red chili, and a pinch of Indonesian shrimp paste into a smooth paste.
  3. Heat 2 tablespoons of oil in a large wok over medium-high heat. Add the aromatic paste and sauté for 2-3 minutes, then introduce the marinated chicken. Stir-fry for approximately 5-7 minutes until cooked through.
  4. Once the chicken is cooked, stir in 3 cups of day-old cooked white rice, breaking up any clumps. Drizzle in remaining kecap manis and soy sauce, toss for 3-4 minutes.
  5. Plate your Nasi Goreng, creating a well for a sunny-side-up egg. Garnish with green onions, tomato, cucumber, and serve with lime wedges, sambal oelek, and shrimp chips.
