  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
For the Gravy
  • 2 tablespoons all-purpose flour use gluten-free flour blend if necessary
  • 2 cups chicken broth can substitute vegetable broth
  • 1 medium yellow onion can also use white or red onion
  • 2 tablespoons olive oil can substitute with canola or avocado oil

Step-by-Step Instructions
  1. Preheat a large skillet over medium-high heat and add olive oil, letting it warm for about 2 minutes until shimmering.
  2. Pat the chicken thighs dry and season both sides with salt, black pepper, paprika, onion powder, and garlic powder.
  3. Sear the chicken thighs skin-side down for about 5-6 minutes until golden brown, then flip and sear the other side for another 5-6 minutes.
  4. Remove the chicken and set aside. In the same skillet, add sliced onions and cook for 6-7 minutes until golden brown.
  5. Sprinkle flour over onions, whisk for 1-2 minutes, then gradually add chicken broth, scraping the skillet bottom. Simmer for 4-5 minutes until thickened.
  6. Return chicken to skillet, spoon gravy over, cover, reduce heat to low, and simmer for 15-20 minutes until cooked through.
  7. Serve the chicken hot with sides like mashed potatoes, rice, or crusty bread.
