- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with olive oil.
- In a large mixing bowl, combine ricotta, drained fresh spinach, grated Parmesan, and the beaten egg. Add minced garlic, oregano, salt, and pepper.
- Spoon the mixture into the greased muffin cups, filling each about three-quarters full.
- Place the muffin tin in the preheated oven and bake for 15 to 20 minutes until golden brown.
- Let them cool in the pan for about 5 minutes before gently popping them out.
