- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat for about 2 minutes.
- Add ½ cup of chopped onions and ½ cup of chopped bell peppers to the hot skillet. Sauté for about 1 minute.
- Add 1 pound of uncooked medium shrimp and 2 tablespoons of taco seasoning. Cook for 1-2 minutes until shrimp are pink and opaque.
- Place a tortilla in a clean skillet, sprinkle ½ cup of melting cheese on half, add shrimp and vegetable mixture, top with more cheese, and fold the tortilla.
- Increase heat to medium and cook for 2-3 minutes on each side until crispy and cheese is melted.
- Slice into wedges and serve hot with favorite dips.
