  • 1 teaspoon Baking Soda Make sure it is fresh

  • 1/2 cup Nuts Chopped walnuts or pecans
  • 1 cup Blueberries Fresh or frozen
  • 1/2 cup Apple Sauce Can substitute half of the mashed bananas

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Mash the ripe bananas until smooth in a large mixing bowl, aiming for about 1¼ to 1½ cups.
  3. Add the eggs, maple syrup, and almond milk to the bananas, mixing until smooth.
  4. Stir in the rolled oats and let them soak for 2-3 minutes.
  5. Gently fold in the whole wheat pastry flour, cinnamon, baking powder, and baking soda until just combined.
  6. Transfer the batter into the prepared loaf pan and bake for 45-55 minutes.
