Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F).
  2. Peel and chop the garlic and strip the thyme leaves, mixing together and rubbing over the rib roast.
  3. Heat olive oil in a skillet, then brown the rib roast on all sides for about 10 minutes.
  4. Transfer the roast to a roasting tin, fat-side up, season with salt and pepper, and add water to the tin.
  5. Cover with aluminum foil and roast, basing cooking time on desired doneness.
  6. Remove foil about 20 minutes before the end of cooking to brown the roast.
  7. Let the roast rest for 10-15 minutes before carving.
  8. Slice and serve with pan juices.
